Apple and Chili-Infused Lamb Medallions
1 cup applesauce
1 Tbsp dark chili powder
1 rack of lamb, trimmed and cleaned
1. Combine the applesauce and dark chili powder, mixing until uniform in color.
2. Cut lamb rack into medallions, leaving them in one-bone sections.
3. Marinate lamb in the apple-chili marinade for 2 hours.
4. Grill to your desired temperature.
