Cinnamon Waffles

Ingredients

3 eggs
2 tablespoons sugar
1 cup unbleached white flour
3/4 cup whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
3 tablespoons butter
1 1/2 cup milk
1 teaspoon vinegar (any kind)
Can of vegetable oil cooking spray

To put on top or on the side:
Real maple syrup
Yogurt
Fruit salad
Powdered sugar
Extra butter

Directions

Separate the eggs. Add 1 tablespoon of sugar to the egg whites. Beat the egg whites and sugar with an electric mixer on high speed until it looks like you have a bowl full of clouds.

Put a strainer over a large mixing bowl. Put into the strainer, 1 cup white flour, 3/4 cup whole wheat pastry flour, 1 tablespoon sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 2 teaspoons cinnamon. Gently shake the strainer up and down until everything sifts into the bowl. Put aside.

Put 3 tablespoons butter in a small bowl and heat in microwave on high for 1 minute until melted. Pour the milk into a 2-cup measuring cup until it reaches the line for 1 1/2 cups. Add to the milk in the cup 1 teaspoon vinegar, melted butter and the egg yolks. Mix. Pour the milk mixture into the flour mixture. Stir with wooden spoon. Pour fluffy egg whites onto the batter. Fold the clouds into the batter 10 times. 

Spray the insides of a waffle iron with oil and heat the iron. Scoop the batter with a 1/2 cup measure and put it in the center of the hot waffle iron in one blob. Wait about four minutes and then lift the top to see if the waffle is done. Serve hot and enjoy!

Yield:  Recipe makes 6-7 waffles
