Easy-As-Pie Peach Cobbler


Ingredients

6 peaches, peeled and sliced
4 Tbsp sugar
1/2 tsp lemon juice
1 1/2 tsp cornstarch
1/2 tsp vanilla extract

Cobbler Topping
1 1/4 cups all-purpose flour
Generous 1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
6 Tbsp butter, diced
1 egg
5-6 Tbsp milk

Directions

1. Preheat oven to 425-degrees. Put the peaches in a 9-inch square ovenproof dish that is suitable for serving. Add remaining ingredients and toss together. Bake for 18-20 minutes.

2. To make the topping, sift the flour, all but 2 Tbsp of the sugar, baking powder and salt into a bowl. Rub in the butter with your fingertips until fine crumbs form.

3. Combine the egg and 5 Tbsp of the milk in a separate bowl. Mix into the dry ingredients with a fork until a soft, sticky dough forms. If the dough seems dry, stir in an extra tbsp of milk.

4. Reduce the oven to 400-degrees. Drop spoonfuls of the topping over the surface of the peaches, without smoothing. Sprinkle with the remaining sugar, return to the oven and bake for an additional 15 minutes, or until the topping is golden brown and firm.

Serve hot or at room temperature with ice cream on the side.
