Mandel Bread

I usually double the recipe to make extra.
Ingredients
1/2 cup oil
1 tsp salt
1 cup sugar
1/2 tsp vanilla
3 beaten eggs
2 cups flour
1 cup chocolate chips, more if you like
Sugar and cinnamon mixed (approximately 2:1 ratio)
Directions
1. Preheat oven to 360 degrees.
2. Combine all ingredients (except for cinnamon and sugar) in a large bowl and mix until all are incorporated well.
3. Flour your hands and a board well. Form mixture into small loaves on a nonstick cookie sheet. Bake for 30 minutes.
4. Remove loaves from oven and slice. Sprinkle with cinnamon and sugar. Place the mandel bread back into the oven for 5-10 more minutes until lightly toasted.
