Middle Eastern Purim Cookies
Ingredients
Dough:
2 cups sifted flour (sift before measuring)
1 1/4 sticks parve margarine
3-4 tablespoons water
Filling:
1/2 cup coarsely ground walnuts, almonds or pecans
3 tablespoons sugar
1 teaspoon cinnamon
confectioners’ sugar for rolling
Directions
Place flour and margarine in food processor and process until crumble consistency. Add water until soft dough forms. Cover for about 30 minutes. Combine filling ingredients. When ready to bake, preheat oven to 350 degrees. Form dough into small walnut-size balls. Make a hole in the center with your thumb. Fill with a heaping teaspoon of filling. Press sides together to close the dough. Form into balls. Make a design on top with fork tines. Place on ungreased cookie sheets. Bake 25-30 minutes. When cool, roll in confectioners’ sugar. Makes about 20 cookies.
