Moroccan Salmon
Ingredients
1 Tbsp sugar
1 Tbsp grated lemon rind
1/2 tsp salt
1/4 tsp black pepper
1 tsp cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
4 salmon fillets, about 1 inch thick, approximately 1 pound
Directions
1. Combine sugar, lemon rind, salt, pepper, cumin, coriander and cinnamon in small bowl to make dry rub. Rub mixture over salmon. Cover and refrigerate at least 30 minutes.
2. Heat oven to 425-degrees. Coat a shallow baking dish with nonstick cooking spray. Place salmon, skin side down, in baking dish.
3. Roast in oven for 10-12 minutes or until fish is easily flaked with a fork.
