Mushroom Onion Quiche
1 package fresh mushrooms, sliced
3 medium sized onions, coarsely chopped
3 cloves garlic, minced
3 Tbsp oil
1/2 package onion soup mix
2 heaping Tbsp mayonnaise
Salt and freshly ground pepper, to taste
1 frozen pie crust
1. Preheat the oven to 350-degrees.
2. Sauté mushrooms, onions and garlic in oil until browned. Transfer mixture to a bowl and let cool.
3. Add eggs, onion soup mix, mayonnaise, salt and pepper to vegetable mixture. Mix together.
4. Pour into pie crust and bake for 45 minutes or until center of quiche is solid and a toothpick comes out clean.
