One Pot Passover Almond Bars


Ingredients

6 tablespoons margarine
2 ounces unsweetened chocolate
1 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla or orange juice
1/2 teaspoon almond extract
1 1/2 cups ground almonds, finely ground

Directions

You can use one pot to mix this entire recipe with a wooden spoon. In a large saucepan, melt margarine and chocolate over low heat, stirring until smooth. Remove from heat. Stir in sugar. Stir in eggs and extracts and blend thoroughly—do not overbeat. Stir in ground almonds until well mixed. Spread in a greased 8-inch square pan. Bake at 325 degrees for 37-42 minutes or until top is shiny and slightly cracked. Remove to rack and cool thoroughly before cutting.
