Potato Chremslach


Ingredients

6 medium potatoes
1 medium onion, diced
2 tablespoons corn oil
4 eggs, lightly beaten
2 teaspoons salt
1/4 teaspoon black pepper
corn oil for frying

Directions

Peel and slice the potatoes and boil them in salted water until fully cooked. Drain and mash. Meanwhile, saute the onion in the corn oil until golden brown. Mix the onion into the mashed potatoes. Let this mixture cool, then stir in the eggs, salt and pepper. Taste and adjust seasoning, if necessary. Heat about 1 inch of oil in a
heavy frying pan. Drop potato mixture, a tablespoon at a time into the hot oil. Fry, turning, until golden brown on all sides. Drain on a clean grocery bag or paper towels. Repeat, adding more oil when needed. Leftover mashed potatoes can be used for this recipe also. Serves 6-8
