Summer Tomatoes With Basil Cream


Ingredients

1 garlic clove, finely chopped
8 oz. light cream cheese
2 tablespoons white wine vinegar
2 tablespoons chopped fresh basil or 1 teaspoon dried crushed leaves
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
2 red ripe tomatoes, thinly sliced
2 yellow ripe tomatoes, thinly sliced
1 tablespoon fresh chopped parsley

Directions

Place garlic, cream cheese, vinegar, basil, 1 tablespoon parsley, salt and pepper in food processor or blender. Process until well blended. Arrange tomatoes with alternate colors on serving platter. Spoon cream cheese mixture over. Sprinkle with remaining parsley. Serves 6
