Sweet Acorn Squash
1 acorn squash
1 Tbsp butter
Dash of salt
2 Tbsp brown sugar
1. Preheat oven to 400 degrees. Using a chef’s knife, slice acorn squash in half. Scoop out center flesh and seeds. Slice into the sides a little without cutting it all the way through. Place each half in a baking pan cut-side up.
2. Add 1/4 inch of water to bottom of pan. Coat inside of each half of the acorn squash with 1/2 tbsp butter, salt and a Tbsp of brown sugar. Add a drizzle of honey. Fill centers of squash with raisins.
3. Bake for 1 hour and 15 minutes until soft. Cool. Cut into cubes or mash. Serve warm.
Serving size: 2-4 people.
