Sweet Potato Chips
3 or 4 medium-size sweet potatoes, unpeeled
Sea salt, to taste
Olive oil cooking spray
3/4 cup Greek yogurt
2-3 Tbsp honey (to taste)
Cinnamon (to taste)
1. Preheat oven to 400-degrees. Using a mandoline or sharp knife, thinly slice sweet potatoes.
2. Line baking sheets with aluminum foil and spray with cooking spray. Arrange sweet potatoes in a single layer. Spray with cooking spray and season with sea salt. Bake for about 30 minutes (depending on thickness of slices) until the edges are crisp and the centers soften, turning once during cooking.
3. Make the dip by combining yogurt and honey. Season liberally with cinnamon.
