Hearty Fall Recipes

Opera singers often have an appreciation of fine cuisine. Dudu Fisher, the famous Israeli opera star about to perform here is no exception.

Mr. Fisher is best known for his stirring performance as Jean Valjean in the hit show, “Les Miserables,” but his career began in his native Israel. He was cantor of the Great Synagogue of Tel Aviv when only 22.

Traveling the world, he was the first Broadway actor to be excused from performing on Friday nights, Saturday matinees and all the Jewish holidays.

Mr. Fisher also is an accomplished cook. His sister, Ahuva Albrecht, who lives here, leads a local Tehillim group every Thursday and recently hosted a delicious buffet luncheon in her beautiful sukkah.

I was lucky enough to taste and get some of her favorite family recipes. I promise it is the unusual spices she uses that make her cholent one of the best I’ve ever tasted! And the sweet potato shepherd’s pie — just fantastic.

Dudu’s lamb shank tzimmes is easy and full of fall vegetables. It’s a complete “concert” of flavors that hit the perfect notes for this time of year.

By the way, you might want to put on a Dudu Fisher CD while cooking or hear him in person at the Baltimore Lyric Opera House on Saturday, Nov. 7.
