Apple Cake

Pareve/Dairy


Ingredients


Dough:
1/2 pound butter or parve margarine
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking powder
3 cups flour

Filling:
4-5 apples, peeled and sliced
1 tablespoon cornflake crumbs
3 tablespoons brown sugar
2 teaspoons cinnamon
2-3 tablespoons jelly, any flavor

Directions


Cream butter and sugar. Add rest of dough ingredients. Wrap dough in waxed paper and refrigerate 2 hours or more. Pat about one-half of dough in greased 8- or 9-inch square pan. Cover with cornflake crumbs. Combine apples, cinnamon and brown sugar and place on top of crumbs. Place 12 dabs of jelly, about one-half teaspoon each, on top of apples. Pinch off pieces of remaining dough and place on top of cake until it is covered (try to leave a few spaces between). Bake at 350 degrees for about 40 minutes or until lightly browned on top. Remove from pan when cool. May sprinkle top with confectioners sugar before serving. Good also warm. Can be frozen.
