In a bowl, combine the egg and yogurt, mixing and set aside. In another bowl, combine the flour, baking powder and baking soda with the cinnamon and sugar. Pour egg/yogurt mixture into the bowl with flour mixture. Add the grated apples and carefully mix all together. Pour oil in a frying pan to about 1/4 inch. Heat the oil and drop spoonfuls of the apple batter into the sizzling hot oil. Fry until fully brown on bottoms as you gently press down the latkes in the pan. Turn them over with a large flexible metal spatula or 2 smaller metal spatulas. Brown on other side. Remove to drain on clean brown grocery bags and then blot with paper towels to remove excess oil. Yields about 20 latkes, depending on size.
