Asparagus Soup

Ingredients

2 cups onions, chopped
1/2 to 3/4 teaspoon garlic powder
3 cups vegetable stock
1 3/4 pounds asparagus, cut into half-inch pieces, save tips
1/2 cup fresh parsley, minced
5 fresh basil leaves, chopped fine or 1/2 to 3/4 teaspoon dried basil
2 teaspoons fresh tarragon, minced, or 1 teaspoon dried tarragon
pinch of cayenne
pepper to taste


Directions

Saute onions until soft with small amount of cooking spray. Add stock, asparagus pieces, parsley, basil, tarragon, cayenne, pepper. Simmer, covered, for one hour. Puree in blender in small batches. Cook asparagus tips in boiling water, drain. Add tips to soup, reheat just till hot. Serves 4-5.
