Bubbie’s Best Potato Kugel

Ingredients

5 large potatoes, peeled and washed
(about 2 pounds)
5 large onions, peeled
3 extra large eggs
1 tablespoon kosher salt
1 teaspoon white pepper (or to taste)
1-2 tablespoons. matzoh cake meal
Oil


Directions

Using fine shredding disc of food processor, shred potatoes and onions together. Let sit for a minute to allow liquid to rise to top. Pour off excess liquid. Place into large mixing bowl and add matzoh cake meal. Stir thoroughly. Let sit for about 1 minute. Add salt, pepper and eggs. Mix thoroughly. Pour 1/4 cup vegetable oil evenly over bottom and sides of glass baking dish. Pour potato mixture into dish. Bake in 375-degree oven until deep golden brown. Let sit for about 15 minutes before serving. Serves 10-12 or more.
