Classic Catering’s Egyptian Charoset

Ingredients

1 cup pitted dates
3 dried figs
3/4 cup pitted prunes
1/4 cup dried apricots
1/4 cup sliced almonds
1/2 teaspoon ginger
2-3 teaspoons sweet Passover wine
2-3 tablespoons sliced flat almonds for garnish


Directions

In food processor, chop the dates, figs, prunes and apricots with 1/4 cup almonds to a fine consistency. Spoon into a small bowl, add ginger and moisten with a little wine. Mixture should be stiff. Shape into a pyramid. Use a wet knife or spatula to smooth. Press the remaining flat almonds onto the sides to garnish. Cover with plastic wrap and refrigerate. Before serving, garnish with seedless green grapes. Serves 10-15.
