Dark Chocolate Cheesecake

Ingredients


Crust:
1 1/2 cups graham cracker crumbs
6 tablespoons butter, melted
1/4 cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon ginger
3/4 cup crushed walnuts

Filling:
5 ounces dark semi-sweet chocolate
1 1/2 pounds cream cheese, softened
3/4 cup sugar
3 large eggs
1 teaspoon vanilla
1 cup sour cream

Directions


For crust: Preheat oven to 350 degrees. Mix all crust ingredients and press into bottom and partly up sides of greased 9-inch springform pan. Smooth mixture on bottom to even thickness. Bake for 10 minutes. Cool and meanwhile prepare filling.
 
Filling: Reduce oven to 275 degrees. Melt chocolate in top of double boiler. Meanwhile, in a large mixing bowl, beat cream cheese with sugar until smooth and light. Beat in eggs and vanilla. Stir in melted chocolate, sour cream and blend well. Pour into cooled crust. Bake at 275 degrees for 1 hour and 15 minutes. Turn off oven and allow cake to cool completely in oven without opening oven door. When cooled, refrigerate or freeze. 12-14 servings
