Grease a 10-inch springform pan with margarine and lightly dust with flour. Set aside. Beat the margarine until soft in a large bowl with electric mixer. Add the sugar and continue to mix. Add the eggs, one at a time, beating until thoroughly incorporated after each addition. Add the flour and baking powder, beating only until incorporated. Pour the batter into the prepared pan. Place the apricot or fruit slices on paper towels to dry and pat to dry. Arrange the fruit decoratively on top of the batter. Combine the cinnamon and sugar and sprinkle over the fruit. Bake in a preheated 350-degree oven for 50-60 minutes. Let stand until cool to remove the sides. Serves 12.
Note: I prefer apricots for this recipe.
