Prepare the cabbage by microwaving or boiling to soften. Core and separate each leaf. Season the ground turkey as you would for hamburgers. Add the raw rice. Place about 2 tablespoonfuls of the meat in each leaf. Fold in edge, then roll and set aside.
To make the sauce: Combine the tomatoes, soup, sauce, sugar, lemon juice, diced onion, salt and ginger snaps in a large pot. Stir and simmer for 5 minutes.
Gently add the cabbage rolls and simmer on low on stove partially covered, or in oven for about 2 1/2 to 3 hours. Serves 8-12.
