Italian Chestnut Flour Latkes

Ingredients

3 cups chestnut flour (available at most gourmet or health food stores)
1/2 teaspoon salt
1/3 cup pinoli (pine nuts)
1/2 cup dark seedless raisins
1 cup cold water
3 eggs, slightly beaten
vegetable oil for frying
parve whipped topping for garnish, optional


Directions

Sift flour and salt together. Add the nuts, raisins and water and stir until you have a rather thick batter. Add eggs and mix well. Heat 1/3 cup oil in a medium skillet. Drop the mixture by tablespoonful into the skillet and fry until browned on both sides. Transfer to paper bags or towels to drain. Continue frying, adding a little fresh oil as necessary. These can be served with whipped cream for dessert or without the cream as a side dish to chicken. Makes 24 pancakes.
