Preheat oven to 350 degrees. Grease a 3-quart Pyrex dish. Beat eggs and butter together until light. Put farfel in strainer, pour hot water over it and soak until it is mushy. Add butter and egg mixture to farfel and stir until mixed. Add sugar, juice, vanilla, salt and blend well. Spoon 1/2 mixture into Pyrex dish; add a layer of peaches, then another layer of mixture, then peaches at the top. Sprinkle with cinnamon and sugar. Bake one hour. Put aluminum foil under the pan to catch any drips. Serves 8-10.
