Mixed Berry Quinoa With Roasted Almonds

Ingredients

1 cup red quinoa
1 cup white quinoa
1 Vidalia onion, diced
5 to 6 medium fresh mushrooms, chopped
1 cup golden raisins
1 cup Craisins
1 cup slivered almonds, already roasted, if possible
2 tablespoons canola oil
salt and pepper to taste


Directions

Cook both quinoas according to package directions. In a separate skillet, saute onions in canola oil until golden brown. Add chopped mushrooms and sauté for one minute. Add raisins, Craisins and almonds, sautéing for another minute. When the quinoa is ready, add to pan and mix with other ingredients. Add salt and pepper.

Serves 6 to 8
