Mrs. Yudin’s Easy-To-Roll Strudel

Ingredients


3 eggs
1 cup sugar
1 heaping teaspoon baking powder
1 scant cup oil
approximately 3 cups flour
1 cup water
pinch of salt
1 teaspoon vanilla

Assorted fillings:
sliced apples
seedless raspberry jam
raisins or currants
cinnamon/sugar mix
chopped nuts
shredded coconut

Directions


Beat eggs and sugar. Add oil then water. Add flour, starting with 3 cups, baking powder and salt. Mix to smooth dough. Flour hands and remove from bowl to floured board. Divide dough into 4 parts. Roll out as thin as possible, without dough sticking. Brush dough with a little oil. Fill with sliced apples and sprinkle with cinnamon/sugar mixture and chopped nuts, if desired. Roll up jelly-roll style and place seam side down on large lightly greased baking sheet. Other rolls can be filled by spreading with a generous layer of jam, then chopped pecans, raisins and cinnamon/sugar mixture. You also can be creative and use a canned filling such as almond along with the apples. Brush tops of rolls with additional oil and sprinkle with more cinnamon/sugar. Bake at 375 degrees until brown. Using 1 egg and 1/3 of everything else will yield 2 long rolls.
