Special Salmon Terrine

Ingredients

1 envelope unflavored gelatin
1/4 cup cold water
1 cup light sour half and half
8 oz. soft cream cheese with smoked salmon
15 oz. canned salmon, drained, boned and flaked
2 teaspoons lemon juice
1 cup shredded peeled cucumbers, well drained
1/2 teaspoon dried dill weed
1/2 teaspoon salt


Directions

Soften gelatin in water in small saucepan; stir over low heat until dissolved. Stir in sour half and half. Beat cream cheese, salmon and lemon juice in large mixing bowl at medium speed with electric mixer until well blended. Stir in half of gelatin mixture. Spread half of salmon mixture onto bottom of lightly oiled 9- by 5-inch loaf pan. Add cucumber and seasonings to remaining gelatin mixture in small bowl; mix well. Spoon over salmon layer. Top with remaining salmon mixture. Chill until firm. Unmold. Garnish with thinly sliced cucumbers and dill. Serves 8
