Ruby Red Slaw

Ingredients

1 pound red cabbage, finely shredded (shred 1 day in
advance, cover with water and refrigerate to keep crisp)
2 tablespoons soy sauce
2 tablespoons white wine vinegar
3 tablespoons fresh sweet tangerine or orange juice
2 teaspoons honey
1 tablespoon olive oil
1⁄8 teaspoon red cayenne pepper
1⁄4 teaspoon salt
2 cooked red beets, peeled and grated
finely grated rind of 1 orange
4 cups sweet tangerine or seasonal orange sections
10 radishes, very thinly sliced


Directions

Place first 8 ingredients in a large bowl. Add remaining ingredients up to 1 hour before serving for best results. Serves 6 to 8.
