Soak cherries in hot water for about 30 minutes. Drain well and set aside. Meanwhile, place chocolate, butter and sugar in a pot over boiling water (double boiler best). Stir until melted. Add all the nuts, mondel bread crumbs, drained cherries, orange rind and liqueur. Mix well and remove from heat. Let cool for about 5 minutes and quickly add the yolks, whisking into mixture so they don’t set. Cool completely and place in a bowl in the refrigerator until firm enough to form into a log. This takes a few hours. Place on plastic wrap or waxed paper, form into a log and wrap tightly. Roll along a smooth surface to get a very smooth round “salami” shape. Refrigerate 4 hours or overnight. Slice and serve cold.
