Preheat oven to 350 degrees. Spray a 9-inch baking pan with cooking spray. Slice the bananas into the pan and sprinkle with the sugar. Toss together gently. Add the bread and coconut and toss all gently. In a medium bowl, combine the vanilla, egg and coconut. Mix and pour over the read mixture. Stir well. Press down with a rubber spatula. Sprinkle top evenly with some nutmeg or cinnamon. Bake for about 1 hour or until firm. Serves 8.

6 slices whole wheat challah, broken or cut into 8-10 pieces each slice
2/3 cup shredded sweetened coconut
1 tablespoon vanilla
1 cup liquid egg substitute
1 1/2-ounce can “lite” coconut milk
nutmeg or cinnamon to garnish
