In a small bowl, whisk together vinaigrette, orange juice and thyme. Set aside. Place the couscous in a large bowl. Pour boiling water over the couscous, stirring to mix well. Cover bowl and let stand until liquid is absorbed, about 10 minutes. Fluff with a fork. Mix in the zucchini, bell peppers, onion and cumin. Pour vinaigrette over and toss everything to combine. Season to taste. This can be prepared 3 hours in advance. Cover and let stand at room temperature. Serves 4.

1/2 cup olive oil vinaigrette

4 sprigs fresh thyme
1 cup couscous
1 1/2 cups boiling water
1 cup 1/4-inch pieces of zucchini
1 cup 1/4-inch pieces of red, yellow or orange bell pepper (or combination)
1/2 cup finely chopped red onion
1 1/4 teaspoons ground cumin
Salt and pepper to taste
