Cream the shortening and sugar together with electric beaters. Beat in the egg. Combine the dry ingredients and slowly add to the creamed mixture alternately with the carrots. Stir in the water. Spoon into a greased 9-inch ring mold. Bake in a preheated 350 degree oven for 35-45 minutes. Invert on a round serving plate and serve peas or other cooked vegetables in the center. 8 servings.
