Preheat oven to 400 degrees. Spray a large baking sheet with the cooking spray. Slice the potatoes very thin and then cut into “French Fry” strips or leave in the thin slices. Place the potatoes in a bowl or plastic bag; add the oil, salt and pepper. Toss to coat. Transfer the potatoes to the baking sheet and spread them out in a single layer. Bake for 10 minutes; turn the potatoes over. Bake for an additional 5-10 minutes or until crisp and golden brown. 4 servings.
