1. Cook honey and salt until it makes a soft ball if dropped into cold water.
2. Beat egg white. Add vanilla. Pour the warm syrup over the beaten egg white, continuing to beat until all the syrup is added and the frosting stands at peak.
3. Add fresh nutmeg, if desired. Frost.
