Jalapeno Corn Cake

Ingredients

8 oz. corn bread mix
1 whole egg
1/3 cup water
1 minced jalapeno pepper
2 Tbsp. fresh corn
1 Tbsp. diced onion
1/2 oz butter or margarine


Directions

1. Thoroughly combine all ingredients until the mixture takes on the consistency of pancake batter.
2. In a non-stick pan melt the butter or margarine. Place 2 Tbsp of batter in pan for each pancake and cook until done.

To serve: Stack a small amount of corncakes in center of plate and arrange the lamb medallions around the stack. Serve with favorite vegetable or potato.
