Jessica’s Sumi Salad (side or entrée)

Ingredients

1/4 cup sliced almonds
1/4 cup sesame seeds*
2 Tbsp oil
2 3-oz packages of Ramen noodles, uncooked and broken
1 head Napa cabbage, finely sliced
8 green onions, sliced
Chicken, cooked and sliced, if desired

Dressing:

1/4 cup sugar
1/2 cup vegetable oil
6 Tbsp balsamic vinegar
Salt and pepper to taste
Combine dressing ingredients in medium bowl and mix well.


Directions

1. Sauté the almonds and sesame seeds in the oil until lightly browed. (Increase the amount of almonds and seeds if the cabbage is very large.)
2. Mix with Ramen noodles, Napa cabbage and green onions.
3. Add dressing shortly before serving. For entrée, add sliced chicken. (Packaged chicken strips from the refrigerator case make for a quick meal.)

Serves 6

* Sesame seeds from the Asian food aisle generally cost less than those sold in the spice aisle.
