Combine herring, carrots and onions in a large mixing bowl. Combine remaining ingredients and stir well. Add to herring and mix thoroughly. Chill, preferably overnight. Keeps for a few weeks. Serves 8 to 12 depending on size of herring jar.

8 ounces sour cream
5 squirts lemon juice
3 tablespoons sugar
