Prepare the rice according to directions. Transfer rice to a medium bowl. Add the remaining ingredients and toss gently but thoroughly. Prepare dressing: Combine all dressing ingredients and shake vigorously in a jar until dressing is emulsified. Pour dressing over salad and toss. Serve at room temperature. Serves 6 to 8.

1 6-ounce package long grain and wild rice with spice packet
3 tablespoons parsley, chopped fine
1/2 cup sunflower seeds
4 fresh firm medium peaches, diced (about 2 cups)
1/2 cup sweet red pepper, diced
1/4 cup golden raisins
1/4 cup dried cherries or cranberries
1/4 cup sweet onion, minced
Dressing:
1/2 cup light olive oil
2 tablespoons fresh lemon juice
1 tablespoon peach chutney
2 teaspoons honey
1 teaspoon soy sauce
1/2 teaspoon curry powder
