Sweet Potato Pie
Pareve
Ingredients
2 cups canned sweet potatoes or yams
one-half cup firmly packed brown sugar
1/4 cup white sugar
2 Tablespoons cornstarch
1 egg, lightly beaten
3 Tablespoons pareve margarine, melted
1/4 teaspoon salt
full one-half teaspoon cinnamon
1/3 cups chopped pecans
one unbaked 9-inch pie crust
Directions
Place the sweet potatoes in a large bowl. Add sugars, cornstarch, egg, margarine, salt and cinnamon, mixing well. Spoon into pie crust. Sprinkle with chopped pecans. Bake in preheated 350 degree oven until top is browned and bubbly, about 45-50 minutes. 8 servings.
