Inside Bubbe’s Kitchen: Chocolate Swirl Mocha Cake

Ingredients:

  • 6 oz. semi-sweet chocolate, grated
  • 2 cups flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 4 tsp instant coffee
  • 3 eggs
  • 1 1/4 cup sugar
  • 2/3 cup margarine
  • 2/3 cup cold water
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350 F.
  2. In a large bowl, mix the flour, baking powder, salt and coffee.
  3. In a stand mixer, beat the eggs, sugar and margarine.
  4. Alternate mixing in the dry ingredients and the cold water.
  5. Add the vanilla. Stir in the grated chocolate.
  6. Pour the batter into a loaf pan and bake for 45-50 minutes OR pour into muffin tins and bake for 20 minutes.
