Light Sweet Potatoes With Apples

2 large sweet potatoes, peeled, sliced and cooked to firm, not mushy
2 large Granny Smith apples, peeled, cored and sliced
juice of 3 oranges
2 tablespoons lime juice
2 tablespoons margarine
3 tablespoons brown sugar
1⁄2 teaspoon cinnamon
honey, optional
In a shallow baking dish, spray with an oil coating. Put in a layer of sweet potato slices, cover with half the apple slices and repeat until all slices are used. Pour the orange and lime juice over all. Dot with margarine and sprinkle with the combined brown sugar (you can use Splenda brown sugar) and cinnamon. Drizzle a little honey over all, if desired. Bake at 350 degrees uncovered until apples are tender and top is brown, about 30 minutes. 6 servings.
