Parve Banana Bread (More Like a Cake)

Ingredients:
1/2 cup parve low-fat margarine
1 1/2 cups sugar
3-4 medium bananas, mashed
2 eggs
1 tsp vanilla
1/2 cup parve milk
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup raisins (optional)
1/2 cup walnuts (optional)

Directions:
Preheat oven to 350 F. Grease and flour a 9×13-inch tin.
Cream the margarine. Slowly add the sugar and beat until light. Add the bananas, eggs, vanilla, and parve milk and beat well.
Mix the flour, baking soda and salt and add to the banana mixture.
Fold in raisins and walnuts if using.
Spread in the pan and bake for 45 minutes or until a toothpick comes out clean.
